Coupe Glass
Method 1. Chill a coupe glass. 2. Add all ingredients including egg white to a shaker without ice. 3. Dry shake hard to fully emulsify the egg white. 4. Add solid ice and shake again until well chilled. 5. Double strain into the chilled coupe. Service notes • Egg white is mandatory and must be fresh and clean. • Foam must be tight, even, and stable. • Fresh lime juice only, never bottled. • No garnish in the glass.
